Ginger Spiced Cookies with Koops’ Mustard
Ingredients:
- 2 ½ cups all-purpose flour (can be made with gluten-free flour 1:1) 
- 1 tbsp ginger 
- 1 tsp cinnamon 
- 1/2 tsp cloves 
- 2 tsp Kosher salt 
- 1 tsp baking soda 
- 1 cup unsalted butter (soft) 
- 1 cup sugar 
- 1 large egg 
- 2 tbsp molasses 
- 2 tbsp maple syrup 
- 1 pinch of turbinado sugar 
- 5 tbsp KOOPS stone-ground mustard 
- 1 tbsp heavy cream 
- 4 tbsp candied ginger finely diced 
Directions:
- Mix flour, spices, baking soda, and salt together 
- Beat butter for about one minute, then add sugar and beat until fluffy 
- Add the egg and continue beating 
- Add molasses, maple syrup, mustard, and cream 
- Add flour mixture to the moist batter and mix for another minute 
- Scoop dough into one inch balls and place on the lined cookie sheet 
- Chill for a few hours 
- Sprinkle turbinado sugar on cookies prior to cooking 
- Cook in a preheated oven at 350F for 12 minutes
