Steak with “Finicky Bitch” Rub
Ingredients:
- 3 pork shoulder blades 
- 1 cup brown sugar 
- ¼ cup Morton Tender Quick cure 
- 1 tbsp summer savory 
- 1 tsp granulated garlic 
- 1 tsp granulated onion 
- ½ tsp rosemary 
- ½ tsp fennel seed 
- ½ tsp coarse black pepper 
Directions:
- Cover steaks with the rub and place in large Ziploc bags 
- Flip and “massage‟ the steaks every 8 to 12 hours for a day and a half 
- Rinse them under cold water for 3-4 minutes, then soak in a change of fresh cold water for 15 minutes 
- Pat dry 
- Cook and enjoy
