Beer & Onion Soup
Ingredients:
- 10 cups onions 
- ¼ cup butter 
- 1 tbsp flour 
- Salt and pepper to taste 
- 1 tbsp dijon mustard 
- 500 ml beer 
- 4 cups beef broth 
Directions:
- Slice onions and fry them in a pan with the butter 
- Add the flour, salt, pepper, and dijon mustard (sauté for about a minute) 
- Then add the beer and beef broth and let simmer 
- Put soup in a bowl with croutons (choose homemade if you like) and then top with cheddar before sticking it under the broiler (let the cheese just start to harden)
