Stuffed Pork Loin
Ingredients for Stuffing:
- 1 lb of crab meat 
- Garlic shrimp 
- Green onion 
- Old bay spice 
Ingredients for Brine:
- Salt 
- Brown sugar 
- Lemon peel 
- Orange peel 
- Garlic 
- Onion 
Directions
- Soak loins in brine for 3 hours 
- Blend all ingredients for stuffing together in a blender 
- Stuff the chops (use a fish filleting knife to work some nice-sized pockets into the side of the chops and then work in the stuffing) 
- Secure the openings with some toothpicks and then place on the grill (option: add rub to the outside of the pork loins) 
- Grill them on the Green Egg/grill at 325F until they reach an internal temperature of just over 140F (about 30 minutes) 
- Elevate: make a sauce for the chops! Use half a pound of bacon, onions, and garlic 
- Add in cream cheese and milk to create a thick creamy consistency 
- Add Pepper and oregano to taste
